Goan style egg curry
Coconut is one of the staple food in Goa. Goan's prefer adding coconut milk in most of the recipes . As Sri is down with fever, today I planned simple egg curry for lunch.
Ingredients:
1 cup coconut milk
4 boiled eggs
1 tbsp ginger garlic paste
1 big tomato chopped into small pieces
1 onion chopped into small pieces
1 pinch of garam masala powder
2 tbsps of oil
2 tsp tamarind extract
Pinch of turmeric powder
Procedure:
Hard boil the eggs and cut in half.
Fry the chopped onions in a kadali till brown and add salt, garam masala powder, turmeric powder, ginger garlic paste.
Fry until the rawness disappears.
Add tomatoes and boil till the oil squeezes out.
Now add coconut milk and boil for 5 minutes.
Remove the lid and add chopped eggs , tamarind extract and cook for 5 more minutes.
Serve hot with rice or rotis.
